Lutein
Lutein INS 161 b, E 161 b
Lutein is a naturally occurring xanthophyll carotenoid widely present in green plants and in the petals of marigold (Tagetes erecta L.). Marigold flowers are extracted to produce marigold oleoresin.
As a food colour, lutein provides yellow to orange shades depending on concentration and formulation.
